Quick and Easy Poilsh Honey Cake

One of the easiest Polish desserts to make, Polish honey cake effortlessly combines a spongy, satisfying texture with a soft sweetness that doesn’t overpower your tastebuds. Usually eaten with a creamy pudding or buttercream layers, this cake is the perfect sidekick to a morning coffee or an afternoon tea. Taking just over an hour to make, this speedy sweet treat recipe is sure to satisfy your sugary cravings while keeping you low on the calorie scale! 

Cake Ingredients: 

• 2 cups fine dry breadcrumbs
• ¼ cup brown sugar
• 1 cup honey + garnish
• 4 eggs, separated
• 1 tablespoon melted butter
• 1 cup toasted chopped hazelnuts

Directions: 

1. Preheat oven to 375 ℉. 
2. Brush cake mould, muffin tin, or loaf pan in melted butter, sprinkling with ¼ cup of bread crumbs. Set aside.
3. Prepare a pot of water over a stove, heating until it begins to steam. Once the pot begins to steam, place honey in a metal mixing bowl and heat it over the pot until it begins to loosen. Once loose, add sugar and egg yolks to the honey, whisking until the contents are frothy.
4. Remove bowl from the heat and add in hazelnuts and remaining bread crumbs, mixing until combined.
5. In a separate bowl, whisk the egg whites together until they stiffen, folding them into the batter.
6. Once combined, add batter to your prepared baking dish and bake for 45 minutes.
7. If topping with whipped cream, allow the cake to cool completely before piping/spreading whipped cream on.  Or, you can decorate with sprinkles, fruit, or more confectioners sugar to create a more indulgent sugary sweet!
